Managing Celiac Disease With a Gluten Free Diet



A gluten free diet is the recommended treatment for Celiac Disease or Celiac Sprue Enteropathy (CSE). Though somewhat controversial, some believe there is a subset of individuals that are sensitive to gluten, the protein portion of the grain in wheat, rye and barley. It was previously believed that oats were also involved, but more current research indicates that those with Celiac Disease can generally tolerate oats. A person with Celiac Disease or gluten sensitivity must read food labels carefully. It can be hidden in sauces, soups, jams and pastes. It is also present in nearly all baked goods, unless specifically market otherwise. Though such products are usually found in specialty food stores, more grocery stores today carry products without the offending ingredients.

The proteins of the offending grains cause a reaction in the small intestine that leads to inflammation. The villi, or finger=like projections in the small intestine are often flattened due to this reaction. Diagnosis of Celiac Disease is done through blood tests and an endoscopy, where a gastrointestinal specialist places a scope with a camera down the esophagus into the first section of the small intestine, for viewing and for possible biopsy of the lining of the small intestine.

Though it can be challenging to avoid foods with gluten, there are many cookbooks and recipes available for gluten free cooking. If a person is having difficulty sorting out food options and those that should be avoided, there are websites that can provide guidance and lists. Dietitians can help by providing the most accurate information on dietary restrictions. Perhaps the greatest challenge is in baking. Gluten is a somewhat sticky substance and helps to keep dough together. Baking with alternative flours takes some adjustment and experimentation. There are plenty of recipes available online as well. Blogs and discussion boards may also provide information from those who have tried various recipes and have had success.
